
Ingredients :
- CAKE
- 1 1/2 cup granulated sugar
- 8 oz cream cheese, at room temperature
- 4 oz unsalted butter, at room temperature ( 1 stick )
- 1 tsp vanilla extract
- 2 large eggs
- 1 1/2 cup all-purpose flour
- 1/4 tsp salt
- 1/2 tsp ground cinnamon
- 1/4 tsp ground ginger
- 1/4 tsp ground nutmeg
- 1/4 tsp ground allspice
- 1 1/2 cup diced peeled apple, about 1 large granny smith apple
- 3/4 cup cinnamon chips
- Cinnamon Ganache Glaze
- 1/2 cup heavy cream
- 1/2 cup cinnamomn chips
- GARNISH
- white sprinkles
Method :
- Preheat oven to 350. Spray a 9 inch springform pan with bakers spray
- Whisk flour, baking powder, salt, cinnamon, ginger, nutmeg and allspice in a bowl
- In a large bowl beat cream cheese, butter, vanilla and sugar until light and fluffy
- Add eggs one at a time, beating after each egg
- Stir in flour just until well mixed, do not overmix
- Fold in apples and cinnamon chips
- Scrape batter into prepared pan, it will be thick. Smooth with an off set spatula
- Bake for 55 to 60 minutes until golden and a toothpick comes out just clean. Cool on wire rack for about 45 minutes before realease ng from pan.
- MAKE GLAZE
- Heat cream just until hot, pour over cinnamon chips in a bowl. Let sit one minute then stir until smooth. Refrigerate about 15 to 20 minutes, stirring often to thicken some
- Pour over cake, decorate with white sprinkles while glaze is wet. Let glaze set before slicing
