Ingredients :
- 2 lbs chicken
- 2 Tbsp olive oil
- 1 large onion
- 1 cup chicken broth
- 1/2 cup white wine
- 1 can (15 oz) tomatoes
- 1 tsp thyme
- 1 1/2 tsp rosemary
- 1 Tbsp lemon-pepper
- Parsley
- to taste salt and pepper
Method :
- Saute chicken in oil, 4 minutes on each side. Remove from heat.
- Pour off all but one tbsp of oil. Add onion, saute for 3 mins.
- Add broth and remove bits from bottom of pan. Raise heat and reduce by half, about 3 minutes.
- Add tomatoes, lemon pepper and herbs.
- Add chicken back. Cook until chicken is done.
