Ingredients :
- 2 chicken breasts
- 1/2 avocado
- 4 small tomatoes
- 2 slices mozzarella cheese
- Salt & pepper
- Dried oregano
- 50 g rissini
- Crushed almonds (optional)
- Avocado Mayonnaise:
- 1 avocado
- 1/2 lemon, juice of
- pinch salt & pepper
- 2-3 tbsp olive oil
Method :
- In a pan put the chicken breasts and cook on each side, add on top the seasonings for the chicken and put on top the tomatoes, mozzarella and avocado.
- In a pot, boil the rissini for 10 mins, and add some salt & pepper.
- Put the chicken on a plate, pour some balsamic vinegar and crushed almonds. Put the rissini and add some avocado "mayonnaise ".
