Ingredients :
- 3 fresh coconuts
Method :
- Wash the coconuts
- Poke a hole in the soft eye with a screw driver and pout the juice out in a jug if keeping.
- Put the coconuts on a tray and bake in oven for 400°F 205°F for 20 minutes. They will crack open Do not turn oven up or leave any longer. If don"t crack carefully use a hammer and screw driver and cloth, as juice may co e out and burn you.
- Cool a little and pull the meat out.
- Peel the skin off with a peeler or knife then rinse in cold water
- Put small amounts in either food processor or blender and shred.
- Turn oven to 200°F 93 farenheight and place the coconut on baking tray lined with greaseproof paper and bake for 1hr.
- Cool store in airtight container or in freezer containers and freeze. Can be used to make coconut macaroons as perfect for them.
