Ingredients :
- 12 whole chives
- 4 oz goat cheese
- 1/2 tsp wasabi paste
- juice of 1 lime
- 1 asian pear sliced into 12 slices
- 6 oz smoked salmon cut into 12 strips
- 12 pieces pickled ginger
Method :
- Prepare an ice bath
- Bring a pot of water to boil. Add chives and blanch for 15 seconds, then put them in the ice bath
- Combine goat cheese, wasabi, and lime juice in a bowl, whisk until smooth
- Top each piece of pear with the wasabi mixture, a piece of ginger and then the salmon. Tie a chive around each
