
Ingredients :
- 3 cup grated sharp cheddar cheese
- 1 cup queso in a jar
- 1/2 cup hot Sadies salsa
- 1/4 packages cream cheese
- 1/2 onion diced
- 1/2 tbsp chili powder
- 1/4 tsp ground cumin
- 2 tbsp chopped cilantro
- 2 can medium heat enchilada sauce
- 3 tbsp canola oil
- 12 corn tortillas
Method :
- Add first 8 ingredients and mix. Set aside. Now heat 3 tablespoons of oil and fry corn tortillas until slightly brown. Not too much or they won"t be pliable. Let cool, now add 1 can of enchilada sauce to bottom of casserole dish. Fill tortillas with cheese mixture and line in casserole dish. Top with last can of enchilada sauce and sprinkle with more cheddar cheese. Bake uncovered for 45-60 minutes at 350°F. Let cool for at least 15 minutes before serving.
