Ingredients :
- Dressing:
- 1/4 c rice wine vinegar
- 1 tbsp soy sauce
- 2 tbsp vegetable oil
- 1/4 tsp sesame oil
- 1 tbsp grated fresh ginger
- 1 garlic clove, minced
- 1/4 tsp red pepper flakes
- 2 c chopped iceberg lettuce
- 1 c mung bean sprouts
- 2 chicken breasts, boneless, skinless, cooked and shredded
- 1 carrot, shredded
- 2 scallions, thinly sliced
Method :
- Make the dressing by combining the vinegar, soy sauce, vegetable oil, sesame oil, ginger, garlic, and red pepper flakes. Whisk until well mixed.
- Place the chopped lettuce, bean sprouts, shredded chicken, carrots and scallions in a large bowl; pour the dressing over all and toss well. Divide between 4 plates and serve. (210 calories/serving; GL=2, Glycals=6)
