
Ingredients :
- for the cookies:
- 2 1/2 cups all purpose flour
- 1 tsp. baking powder
- 1 tsp. salt
- 1 stick unsalted butter
- 2 cups sugar
- 2 eggs
- 1 (15 oz.) container Ricotta Cheese
- 3 tbsp. lemon juice
- zest of 1 lemon
- for the glaze:
- 1 1/2 cups powdered sugar
- 3 tbsp. lemon juice
- zest of 1 lemon
Method :
- In a medium bowl, combine the flour, baking powder, and salt.
- In a large bowl, combine the butter and sugar. Mix with electric mixer until light and fluffy. Add eggs ,beat until incorporated. Add Ricotta Cheese, lemon juice, and lemon zest. Beat until well blended. Stir in the flour mixture.
- Line baking sheets with parchment paper. Spoon the dough onto the baking sheets. Bake for about 15 minutes, until slightly golden on the edges. Remove from oven and let cookies rest on baking sheets for about 20 minutes.
- For the glaze:
- Combine all ingredients in a bowl and stir until smooth. Spoon the glaze, about 1/2 tsp. onto cookies. Let glaze harden for about 2 hours. Enjoy!
