Ingredients :
- 2 cups all purpose flour
- 10 potatoes red or yellow
- 1 cup sharp cheddar cheese shred
- 1/2 cup parmesan/romano cheese shred or grated
- 1/2 cup milk whole or 2%
- 2 teaspoon baking powder
- 3 tablespoon butter
- 1 medium/large onion diced
- Optional vegetables, broccoli/jalapeno diced small
- 2 large eggs beaten
Method :
- Mix in large bowl milk, butter, baking powder, all cheese, onions, add flour to make pancake like batter. Add jalapeno if using.
- Add potatoes to batter mixture and mix with hand mixer until well mixed .
- In a large fry pan coat bottom with oil, heat pan medium hot.
- Using a large spoon scoop up potato mixture and put in pan, into patties, somewhat flatten patties in pan, let fry 3 minutes to brown, turn over and flatten again, let pattie brown. Serve with sour cream on side.
