Ingredients :
- 2 can red kidney beans (each 1 lb.)
- 1 large carrot / chopped
- 1 dry onion/ chopped
- 1 large tomato/ puréed
- 1 tbs tomato paste
- 1/2 tbs red pepper paste
- to taste Salt
- to taste Black pepper
- 1/2 tsp cumin
- 1/2 red pepper flakes
- 3 cups hot water
- 4 tbs spoon of vegetable oil
- 2 tbs olive oil
Method :
- Prepare everything, open your can , rinse and drain beans, chop onion and carrot, purée tomato, heat 4 cups of water
- Get ready for your spices
- Heat v. Oil add onions and carrot , sauté
- Add puréed tomato and paste
- Add water
- And spices
- Stir, combine all and cover , mid- heat cook carrots about 25-30 minutes, when they are tender add beans
- Since beans are already cooked, just boil about 5-6 mints. .mine was very spicy , you be more careful , if so add some boiled water over it.
