
Ingredients :
- 600 ml full fat milk
- 300 ml whipping cream
- 75 grams caster sugar
- 1 tsp banana extract/essence
- 5 egg yolks
- 30 grams dessicated coconut
- 75 grams caster sugar
- 1 gram Ice cream stabiliser (optional)
Method :
- If using stabiliser, mix with 1 part caster sugar. if not skip this step
- Put milk and cream in a pan, do not switch on.
- Stirring the milk mix pour the sugar and stabiliser mix into it then let it stand for 15 minutes. If not using stabiliser miss this step
- Whisk egg yolks with other caster sugar then add banana extract and whisk a little more. If not using stabiliser use all sugar now.
- When 15 minutes are up slowly heat the milk mix up then when warm enough to dissolve the sugar add the egg mix and stir until it coats the back of a spoon.
- Pour into a big bowl and leave to cool and chill.
- Paddles turning pour mixture in the ice cream maker and let run until ice cream is ready.
- Put 3rd of ice cream into a freezeable tub add 3rd of dessicated coconut mix, add half more ice cream mix, then half dessicated coconut then stir again, add rest of ice cream then coconut stirring 1 last time. Serve straight away or freeze.
- Enjoy...hubby had his with orange cake and sprinkles with chocolate sauce.
