
Ingredients :

- 2 pounds large carrots
- 1/4 cup extra virgin olive oil
- to taste salt
- ◆◆◆◆◆◆◆◆◆◆chicken◆◆◆◆◆◆◆◆◆◆
- 2 pounds chicken breast
- 1/3 cup lemon juice
- 1/3 cup sugar
- 1 teaspoon caraway seeds
- 1/2 teaspoon salt
- 1 cup water, plus more if needed
Method :
- Cut the carrots into thirds. Heat oil and simmer,covered 30 minutes
- Add chicken to pan pour lemon juice over it. Add salt, sugar, and water. Simmer 45 minutes till liquids reduce. Pull apart by shredding the chicken with a fork. Add caraway seeds. Deglaze pan with a little bit of water. Stir and serve with carrots. Hope you enjoy!
