
Ingredients :
- 1 cup chopped (processor) scallops
- 1 teaspoon fresh parsley
- 1 teaspoon fresh cilantro
- 1 teaspoon chives
- 1 egg
- 1/2 cup mayonnaise
- 2 teaspoons flour
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/4 cup chopped celery
- 1 teaspoon chopped shallot
- 1/2 teaspoon lime juice
- 1/2 teaspoon garlic powder
- 1/2 teaspoon olive oil
- Bread crumbs until lightly thick
Method :
- Mix all ingredients lightly in a mixing bowl
- Pan fry with olive oil until golden brown on both sides
- Place cakes on a baking sheet at 350 for 5-7 minutes
- Serve with lemon wedge and cilantro-lime mayo spread (mayo, lime juice, salt, pepper and cilantro)
