
Ingredients :
- 1 lb boneless country style pork ribs
- 10 oz mixed vegetables
- meat coating
- 3 tbsp cornstarch
- 1 large egg
- 1/2 tsp salt
- 1/2 tsp black pepper
- sauce
- 3 tbsp hoisin sauce
- 3 tbsp soy sauce
- 2 tbsp sesame or vegetable oil
- 1 tbsp hot sauce (or to taste)
- 2 tsp garlic powder
- 1 tsp dried ground ginger
- 1 tbsp cider vinegar
- 1 tbsp honey
- 1 each stock or water
- 1 tbsp cornstarch

- 1/4 cup peanuts
Method :
- Cut pork into about 1 inch cubes
- Mix meat coating ingredients
- Put pork into meat coating, mix well
- In a stir-fry pan, wok or skillet, on medium high heat, heat 2 tablespoons of vegetable oil.
- Carefully add coated pork too hot oil. Stir to keep chunks separated. Once it starts to cook (about 2 minutes), you can move to the next step.
- Mix sauce ingredients in a bowl, whisk well. If you want a thick, closer to a glaze, use 1/2 cup water/stock. If you like a little more sauce, use 1 cup. I used 1 cup because that"s the way we roll.
- Keep stirring pork every minute or so. Keep cooking until browned and done. Ideally you are going for crispy outside, tender but cooked inside. About 8-10 minutes.
- Remove pork to a plate when done to your liking.
- Add about 2 tablespoons vegetable oil to hot pan. Place mixed vegetables in hot oil. I used a premade vegetable kit this time.
- Stir-fry vegetables for about 3-5 minutes, to more heat through than cook completely.
- Add mixed sauce to vegetables. Bring to a low boil, turn down heat to medium low. Cover pan.
- Let cook for about 3 minutes, then add pork back in. Give it a good stir.
- Cover and let simmer for about 5 minutes.
- If you wish to add some peanuts, put those in 2 minutes before done, and stir.
- We like ours over cooked brown rice, but noodles would work well also.
