Recipe Olive Vinaigrette

Ingredients :

  • 2 tbsp extra virgin olive oil
  • 1/4 tsp minced garlic
  • 1 tbsp fresh lemon juice, or more to taste
  • 1 salt, to taste
  • 1 pepper, to taste
  • 1/4 cup chopped pitted kalamata or other cured black olives

Method :
  1. Place extra virgin olive oil and the garlic, lemon juice, and olives in a food processor or blender until well blended.
  2. Or, you can use a fork to mash everything in a small bowl until they become a paste.
  3. Taste for seasoning.
  4. Add salt and pepper to taste, and more lemon juice as necessary.
  5. *This recipe goes great on the side of roasted broccoli or cauliflower.*
  6. **This recipe makes about 1/3 cup.**
  7. ***Any kind of black olives cured with herbs will also work for this recipe.***
  8. ****You can also add 1/4 teaspoon of dried oregano or thyme to the vinaigrette or 1/2 teaspoon of fresh.****
