Ingredients :
- 2 tbsp extra virgin olive oil
- 1/4 tsp minced garlic
- 1 tbsp fresh lemon juice, or more to taste
- 1 salt, to taste
- 1 pepper, to taste
- 1/4 cup chopped pitted kalamata or other cured black olives
Method :
- Place extra virgin olive oil and the garlic, lemon juice, and olives in a food processor or blender until well blended.
- Or, you can use a fork to mash everything in a small bowl until they become a paste.
- Taste for seasoning.
- Add salt and pepper to taste, and more lemon juice as necessary.
- *This recipe goes great on the side of roasted broccoli or cauliflower.*
- **This recipe makes about 1/3 cup.**
- ***Any kind of black olives cured with herbs will also work for this recipe.***
- ****You can also add 1/4 teaspoon of dried oregano or thyme to the vinaigrette or 1/2 teaspoon of fresh.****
