
Ingredients :
- 5 cup acorn squash cut in small cubes
- 5 cup vegetable broth
- 1 clove garlic, crushed
- 1 piece fresh ginger, grated
- 1 tbsp ground cumin
- 1 tbsp curry powder
- 1 tbsp turmeric
- 1 dry bay leaf
- 2 whole cloves
- 1/4 tsp ground nutmeg
- 1/4 tsp ground black pepper
Method :
- Put all ingredients in a pot and bring to boil
- Reduce heat to low, cover and let simmer for half an hour
- Remove from heat and let cool down for half an hour
- Put in food processor and blend till liquid
- Put back in pot, reheat and serve hot
- Enjoy!
