Ingredients :
- 8 cup cubed chicken thighs
- 7 cup shredded carrots
- 1 cup chicken broth
- 1 lb broccoli
- 1 large onion, chopped
- 8 oz tomato paste
- 3 clove garlic cloves
- 1/2 tsp salt
- 3 tbsp ground cumin
- 1/2 tsp sage, ground
- 1/2 tsp ground black pepper
- 1/4 cup chopped parsley
- 2 tbsp paprika
- 2 tbsp vegetable oil
- 1 red pepper flakes
- 6 tbsp grated parmesan cheese
Method :
- Dice the chicken, and shred the carrots.
- Heat oil, chop onions, and slice garlic, then add to oil. Sauté for 7 minutes.
- Add carrots and chicken. Simmer 7 minutes add broth and spices
- Simmer 10 minutes stirring occasionally. Add tomato paste mix well. Add broccoli on top cover. Let cook steam till broccoli is tender about 5-7 minutes.
- Mix everything well thats in pot.
- Top with parmesan cheese, and red pepper flakes.
