Recipe Cream of Wheat Griddlecakes (with healthy alternatives)

Ingredients :

  • 1 1/4 cups flour (1/4 cup whole wheat flour)
  • 1/3 cup white sugar (1 TBSP Truvia)
  • 1/3 cup instant cream of wheat
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/4 cup vegetable oil (2 TBSP natural applesauce)
  • 1/2 tsp salt
  • 1 egg
  • 1 1/4 cups milk
  • 1 tsp vanilla extract (removed)
  • 1/2 cup sour cream (1/2 cup vanilla flavored greek yogurt)

Method :
  1. Sift together flour (whole wheat flour), cream of wheat, sugar (Truvia), baking soda, baking powder, and salt in a large bowl. Set aside.
  2. Whisk together milk, sour cream (yogurt), vegetable oil (applesauce), egg and vanilla (removed) in a separate bowl.
  3. Make a well in the center of the dry ingredients and stir in the wet ingredients. Do not overmix the batter.
  4. Heat a large skillet over medium heat. Pour 1/3 cup of batter onto the skillet and cook until bubbles appear on the surface. Flip with a spatula and cook until browned on the other side.
