Ingredients :
- 1 cup Chana dal
- 2 tbsp Ginger Garlic (Crushed)
- 1 tsp cumin seeds
- 4-5 curry leaves
- 1/2 tsp mustard seeds
- Pinch Asafoetida
- 2 medium size onion
- 1 tsp turmeric
- 1 tbsp Red chilli powder (optional)
- 4-5 green chilli (chopped)
- 1/2 cup coriander leaves (chopped)
- to taste salt
- 3 tbsp oil
- 1 cup Bajri (Pearl Millet) flour
- 1/4 cup water
Method :
- To make bhakri, take bajri flour and slowly start adding water in it. Make hard dough out of it and knead it really well until it gets softer.
- Now make small to medium sized balls of the dough. Sprinkle a good amount of bajri flour on the rolling board. flatten a ball and place it on the flour. Add some more flour on top.
- With your palms, lightly press as well as rotate the roti. Add more flour if required.
- Now heat up pan and put roti on top of it. Gently pour and spread water on upper surface and let it cook until it separates from pan easily.
- Now flip the roti and half cook it. Now its time to take down pan off the heat and put roti up side down on flame directly. It will puff and become lighter. Our Bhakri is ready now. You can add some ghee on top of it.
- Now to make zunka, soak chana dal at least for 3-4 hr. Now grind chana dal until it become smooth paste.
- Heat oil in kadhai. Add mustard seeds in it. As soon as it starts popping add cumin seeds. Now add ginger garlic, green chilis and curry leaves in it.
- Now add finely chopped onion and asafoetida, red chili powder and turmeric, cook it until onions become golden brown.
- Now add our chana dal paste in it. Stir it continuously 4-5 mins otherwise it will stick to the bottom of kadhai and burn.
- Sprinkel some water so our zunka won"t become too dry. Add salt at this stage. Put lid on it and let it cook for another 5-10 mins
- Now our zunka is ready. Add some raw onion and coriander leaves top of it. Pour some peanut oil on it. Its ready to eat with bhakri.
