
Ingredients :
- 2 tbsp coconut oil
- 4 small white potatos
- 1 medium sweet potato
- 1/2 medium white onion
- 1/2 medium red onion
- 3 clove garlic
- 1/2 tbsp olive oil
- 1/2 tsp chives (dried or fresh)
- 3 tsp garlic salt
- 1/2 tsp basil
- 1 tsp Italian seasoning
- 1 tsp black pepper
- 1 cup frozen spinach
Method :
- Set stove top to medium, add coconut oil. Cut potatoes into bite size pieces. I leave the skins on, you can peel them if you prefer. Cover while you cut the rest of the ingredients and stir occasionally.
- Dice and add the onions. Mince and add the garlic. Stir.
- Add the olive oil, and the rest if the ingredients. Mix well.
- Keep an eye on them and stir every few minutes. Reduce heat to low once potatoes begin to soften.
