Ingredients :
- 2 C shredded chicken
- 1 C toasted coconut
- 4 limes; zested & juiced
- 1/4 red or yellow bell pepper; julienne
- 1/2 bundle cilantro; chiffonade
- 15 oz mayonnaise
- 2 T Madras curry powder
- 1 large pinch kosher salt and black pepper
Method :
- Combine mayo, lime juice and zest, curry powder, salt, and pepper in a mixing bowl. Whisk to combine.
- Add chicken, bell pepper, cilantro, and coconut. Mix thoroughly.
