
Ingredients :
- 4 white fish fillets, I used Sole
- 200 g. Frozen Mixed fish
- 1/2 cup Sweetcorn
- 1/2 cup Garden peas
- 1/4 cup Broad Beans
- 6 Cherry Tomatoes cut in half
- 1/2 Lime
- 1/2 Lemon
- 1 Sweet Pepper
- 1/2 Small Onion chopped fine
- 1 tsp mixed Pepper
- 1/4 tsp Black Pepper
- 1 Tbsp Balsamic Vinegar
- 1/4 tsp Sea Salt
- 1/4 green chilli pepper chopped tiny
Method :
- Melt a knob of butter in a frying pan with a lid
- Add all the fish and veg to the pan bring to the boil then simmer for 10 minutes
- Cut the chili up into tiny pieces and spread on top of the fish
- Squeeze the lemon about a teaspoon full and the same with the lime. (Keep the lemon and lime to slice them for the presentation)
- Add the peppers and sea salt and stir gently return the lid and simmer for 5 minutes
- Add the peppers on top of the dish stir gently and serve.
- Add to serving dish and add the slices of lemon and lime on top
- New boiled potatoes, or rice would be nice with the fish dish.
