Ingredients :
- 1 medium onion chopped
- 1 cup pearl barley
- 1/2 cup slivered almonds or pine nuts
- 1/4 cup butter
- 1/2 cup fresh parsley
- 1/4 cup green onion
- 29 oz broth
Method :
- Saute the onion, barley and nuts in the butter until the barley is browned
- Stir in parsley and green onion
- Transfer to a greased baking dish and add the broth
- Bake at 350°F for 1 1/4 hours or until the barley is tender and all the liquid is absorbed
