
Ingredients :
- 2/3 cup shortening
- 1/4 cup granulated sugar
- 1/4 cup firmly packed brown sugar
- 1 egg or equivalent of egg substitute
- 1 1/2 cups flour of choice (if gluten-free will need to add xanthum gum, if your flour doesn't have it already added)
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1/2 cup crushed Peppermint candy or candy canes
Method :
- Preheat oven to 350 degrees. Lightly grease baking sheet.
- Cream together shortening, granulated sugar, & brown sugar. Beat in egg. Add flour, baking powder, & salt. Blend well. Stir in crushed Peppermint.
- Shape dough into 1 inch balls & place on cookie sheets. Bake for 15 minutes.Remove & cool.
