Ingredients :
- 800 grams small joint of pork lion sliced into 6 pieces
- 150 grams Chestnut Mushrooms sliced
- 3 Apples sliced thinly
- 2 Shallots sliced
- 1 pinch salt
- 1/4 tsp Rainbow Pepper or any other
- 1/2 tsp BBQ Seasoning
Method :
- In a greased roasting dish lay the pork chop shapes in the bottom
- On top lay out the sliced apple then add the sliced shallots
- Add the sliced mushrooms on top and then sprinkle the salt and pepper all over then the BBQ seasoning on the top cover with foil
- Cook on gas 5 or 175°C , for 45 minutes
- Spoon the cooked mixture onto serving plates and serve with lovely new potatoes and asparagus. Nice with a sweet chutney. And a cooling cucumber and spring onion side salad.
