Ingredients :
- pickle part
- 1 cup kosher pickle juice
- 1 1/2 lb chicken thighs, boneless skinless
- 1/4 tsp salt
- onion peppers
- 1 large onion. sliced
- 1/2 cup green bell pepper, chopped
- 1/4 tsp salt
- 1/4 tsp ground black pepper
- 2 tbsp butter
- 1 1/2 cup sliced okra
- batter
- 1 large egg
- 2 tbsp baking powder
- 1/4 cup grated parmesan cheese
- 1/2 cup crushed pecans
- 1 tbsp parsley
Method :
- Marinate the chicken thighs in pickle juice overnight
- Preheat oven 425° Fahrenheit
- Take chicken out of pickle juice, salt and discard the juice.
- Mix the baking powder, egg, parmesan cheese, parsley, and pecans. In a medium bowl
- Dip chicken into batter coat well put on an oven safe pan bake 30 minutes.
- In a pan melt butter add, okra, onions, peppers, salt, and ground black pepper. Sauté till onions and peppers are tender
