Ingredients :
- 100 grams dried quinoa
- 75 grams parsley, roughly chopped
- 300 grams tomatoes, cut into 1cm dice
- 100 grams cucumber, diced
- 1 tbsp olive oil
- 2 tbsp balsamic vinegar
- lemon juice
- 50 grams salad leaves
Method :
- Cook the quinoa following instructions on the pack and leave to cool
- Serve the quinoa on top of a bed of salad leaves and top with the chopped ingredients. Cover with the oil & balsamic dressing and a squeeze of lemon juice.
