Recipe Quinoa Tabbouleh

Ingredients :

  • 100 grams dried quinoa
  • 75 grams parsley, roughly chopped
  • 300 grams tomatoes, cut into 1cm dice
  • 100 grams cucumber, diced
  • 1 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • lemon juice
  • 50 grams salad leaves

Method :
  1. Cook the quinoa following instructions on the pack and leave to cool
  2. Serve the quinoa on top of a bed of salad leaves and top with the chopped ingredients. Cover with the oil & balsamic dressing and a squeeze of lemon juice.
