
Ingredients :
- 2 pcs (350 gr) dried fish
- 1 pc (150 gr) young mango, cut lengthwise
- 50 gr corn
- 1 red chili, sliced diagonally
- Handful basil
- to taste Sugar and salt
- Banana leaves to wrap
- Sticks (toothpicks) to lock the wrap
- GROUND SPICES
- 6 shallots
- 2 cloves garlic
- 6 cayenne peppers
- 4 pcs candlenut
- 1 pinch roasted shrimp paste
Method :
- Mix the pieces of young mango with corn and spices, stirring until blended.
- Take a banana leaf and lay the young mango mix on top. Add the dried fish, red pepper and basil.
- Wrap in an elongated form, then pin the ends with toothpicks. Steamed until cooked.
- Pepes is ready to be served with rice.
