Ingredients :
- 2 cups AP flour
- 2 cups granulated sugar
- 4 tbsp (heaping) Cocoa powder
- 1/2 tsp Salt
- 1 stick Butter
- 1/2 cup corn oil
- 1 cup boiling water
- 2 Eggs
- 1/2 cup Buttermilk
- 1 tsp Baking Soda
- 1 tsp Vanilla
- ICING
- 1 1/2 sticks Butter
- 4 tbsp (heaping) Cocoa
- 3 cups Powdered Sugar
- 1 tbsp Vanilla
- 6 tbsp Milk (can be part whole milk , part Buttermilk or all of either) taste does not change
- Optional - 1 cup chopped pecans
Method :
- Preheat oven to 350
- In large bowl mix flour, sugar, and salt.
- In medium saucepan melt 1 stick butter, oil, and cocoa. Bring to a boil and let it boil for about 1 minute. Add boiling water. Let this mixture boil for another minute. Remove from stove and pour over flour mixture. Stir all together and let it cool while preparing other ingredients.
- Pour well mixed batter into 11 x 17 baking sheet. Place in oven and cook 20-25 minutes.
- ICING:
- You will need to prepare this when cake has about 5 mins cooking time left. Icing needs to be added while cake is still warm.
- In saucepan melt 1 1/2 sticks Butter. Add Cocoa stirring until smooth. Remove from heat. Add powdered sugar, vanilla, and milk. Stir until smooth.
- Optional: You add nuts at this point. Mix well into icing.
