Ingredients :
- 3 pints cherry tomatoes cut in half
- 2 cups sugar
- 1 shallot minced
- 2 cloves garlic minced
- 1 tsp crushed red pepper flakes
- to taste salt and pepper
- 1/2 fresh lemon
- tbsp olive oil
- 3 leaves fresh basil minced or chiffonade
Method :
- In a sauce pot heat up the olive oil and add your shallots and garlic and saute for about 1 min
- Then add your tomatoes, sugar, salt and pepper and crushed red pepper flakes
- Let that simmer for about ten minutes, pull off the heat and then add your chopped fresh basil and juice of half a lemon
- Chill for about an hour. This gets better as it sits and is best served chilled or room temp.
- Serve on your favorite fish, toast or even on goat cheese.
