Ingredients :
- 1 c cooked black beans (if canned, rinsed), mashed and warm
- 1 large garlic clove, smashed with 1/4 tsp salt
- 8 Romaine lettuce leaves, large
- 1 lb grilled sirloin steak, thinly sliced
- 1 c shredded cheese (cheddar or Monterey Jack)
- 1 c guacamole
- 1 c tomato salsa, or as needed
Method :
- In a small skillet over low heat, mix the garlic and salt into the black beans.
- Select 8 of the best large outer leaves from a head of Romaine lettuce. Clean and set on a work surface.
- Place a few slices of steak on each leaf of Romaine. Top the steak with a portion of beans, cheese, guacamole and salsa. Roll as if making a burrito with a flour tortilla. Serve 2 per person with extra salsa on the side.
