Ingredients :
- 1 can (15 oz) garbanzo beans, rinsed and drained
- 1/3 cup (80 ml) tomato paste
- 4 Tbsp PB fit (peanut butter powder)
- 2 Tbsp water
- 3 Tbsp lemon juice
- 1/2 cup (120 ml) fresh coriander, de-stemmed
- 1/4 tsp salt
- 4 Tbsp olive oil
- (a pinch of cayenne pepper, optional)
Method :
- Remove the skins from the garbanzo beans. Put the beans in a food processor and blend well
- Add tomato paste, PB fit, water, lemon juice, coriander, salt, olive oil and blend well until everything is combined.
- I used PB fit and water instead of tahini. PB fit is a powdered peanut butter like PB2.
- You can add cayenne pepper and more salt to suit your taste.
