Ingredients :
- 2 (8 inch) pie crusts
- 4 sweet potatoes (about 2 lbs)
- 1 cups sugar
- 1/2 cup brown sugar
- 1 tsp vanilla extract
- 1 tsp lemon extract
- 1 tsp nutmeg
- 1 tsp cinnamon
- 14 oz. can of sweetened condensed milk
- 1 stick butter melted
- 2 large eggs
Method :
- Preheat oven to 400°F.
- Add sugar, nutmeg, cinnamon, condensed milk, butter, eggs, and vanilla to potatoes; whisk until mixture is smooth. Pour evenly into crusts.
- Bake until edges of filling are set and center is soft, 28 to 30 minutes. Cover edges of crust with foil to prevent over browning, if necessary. Cool on wire rack.
