Ingredients :
- 3 cup chopped organic lamb meat
- 1 tomatoe
- 1 jalapeño
- 1/3 chopped red onion
- 1 clove chopped garlic
- 1 tsp freshly crushed pepper
- 1 tsp freshly ground organic cumin seeds
- 1 tsp kosher salt
- cilantro
- 8 handmade tortillas
Method :
- Cube the lamb and set aside. You then chop the tomatoes, onion, jalapeño, and garlic. Chop the cilantro and set aside till the end. Now grind the cumin seeds...set aside. Grab your pan and pour some oil in it, medium high heat, then dump the chopped vegetables first (except the cilantro). Cook for about 5 min. stirring from time to time because you want the vegetables to burn a little bit to achieve that smokey flavor.
- Now you add the lamb. Season with the salt, pepper, and the freshly grounded cumin seeds. While the lamb and the rest of the ingredients are cooking heat your iron griddle to heat up some tortillas, medium high heat, and lightly oil the griddle to just barely crisp the tortillas.
- After the tortillas are done fold them in half and place on plate...add the lamb. Sprinkle the freshly chopped cilantro over the meat and you"re done. Vamonos! NOTE: You can use any left over meat really, I just happened to have lamb for this dish. Also, I had left over handmade tortillas but store bought is ok, too.
