Ingredients :
- 2 cups Brown Rice
- 2 cans Red Beans
- 1/2 Large Red Onion
- 1 Large Bell Pepper
- 3-4 minced/chopped Garlic
- 3 tbsp Real Butter
- 3 tbsp Extra Spicy Mrs. Dash
- 3 tbsp Lemon Mrs. Dash
- 3 tbsp Cajun Seasoning
- 2 tbsp Sea Salt
- 7 cups Water or Chicken Broth
Method :
- The rice... I hate how grainy brown rice can be. I soak the brown rice for 30 minutes to allow it to expand a bit...
- While rice soaks... Chop up your onion, green pepper and garlic. In a nice medium stock pot, add the chopped veggies and butter. Saute the veggies and sprinkle a bit of Sea Salt to wake the flavors a bit. Do this for about 5-7 minutes over medium heat.
- Next... Drain the water off the rice. Once all the liquid has run off, add the rice to the veggies. Make sure to coat rice with veggie and butter mixture. Stir them together for about 1 minute.
- Next... Add your seasonings and mix them together...
- Next... Add the water/chicken broth (I prefer chicken broth). It will seem like a lot but the rice will soak up the moisture and soften the rice. Once the liquid begins a soft, bubbling boil, turn the heat down on low and cover with a lid... Allow it to cook slowly for about 45 minuets to 1 hour.
- Next... Once you see the rice has began to consume the liquid but not quite all of it give it a couple of stirs... Drain the liquid off the Red Beans and add to your rice... Stir them into the rice and cook for another 15-30 minutes (depending on how much liquid was left in the pot). Stir occasionally. It is done when the consistency is somewhat thick, rich and creamy in appearance... It should not be sticky or watery.
- Enjoy... You can fix some corn bread or muffins to compliment the meal.
