Ingredients :
- 2 cans black beans (15.5 oz. each)
- 1/2 tsp sugar
- 1/2 tsp chili powder
- 1/2 tsp garlic powder
- 2 cups water
- 1 cup long grain white rice
- 1 Tbsp butter
- 1 tsp lime zest
- 2 Tbsp lime juice
- 1/2 cup chopped clantro
Method :
- First make rice by bringing water to a boil
- Add butter & rice to water
- Stir to combine, cover, reduce heat to low and simmer approx 20 minutes or until rice is tender
- Once cooked remove from heat, fluff with fork and stir in the lime zest, lime juice and cilantro
- Next prepare the black beans by adding black beans, sugar, chili powder and garlic powder to a pot
- Bring to a simmer and allow to cook for 20 - 25 minutes stirring often until heated through
- Place serving of rice on plate, top with black beans and enjoy.
