Recipe Black Beans & Cilantro Lime Rice

Ingredients :

  • 2 cans black beans (15.5 oz. each)
  • 1/2 tsp sugar
  • 1/2 tsp chili powder
  • 1/2 tsp garlic powder
  • 2 cups water
  • 1 cup long grain white rice
  • 1 Tbsp butter
  • 1 tsp lime zest
  • 2 Tbsp lime juice
  • 1/2 cup chopped clantro

Method :
  1. First make rice by bringing water to a boil
  2. Add butter & rice to water
  3. Stir to combine, cover, reduce heat to low and simmer approx 20 minutes or until rice is tender
  4. Once cooked remove from heat, fluff with fork and stir in the lime zest, lime juice and cilantro
  5. Next prepare the black beans by adding black beans, sugar, chili powder and garlic powder to a pot
  6. Bring to a simmer and allow to cook for 20 - 25 minutes stirring often until heated through
  7. Place serving of rice on plate, top with black beans and enjoy.
