Ingredients :
- 2 aubergines, cut in 1 cm chunks
- 2 medium red onions, cut in chunks
- Chicken for 4 people
- 2 cloves garlic or 1 tbspn garlic paste
- 1 Tbsp +/- lemongrass paste and ginger
- 2 courgettes, cut in 1cm semi-circles
- 1 tbspn brown or white sugar
- 1 tbspn fish sauce
- 1-2 green peppers in chunks
- 1 tbspn white wine vinegar
- 2 tbspn Thai green curry paste
- 1 tin coconut milk
Method :
- Roast the aubergines with a bit of oil, garlic, s&p in oven at 180 deg until turning brown.
- In a large saucepan fry for 10 mins the onion, chicken, garlic, +/- ginger and lemongrass.
- Add the courgette, fish sauce, white wine vinegar and sugar. Fry for 5 mins.
- Add the aubergine, green peppers and Thai paste. Heat for approx 5 mins and then add coconut milk. Simmer for a few minutes.
