Recipe Thai green chicken curry

Ingredients :

  • 2 aubergines, cut in 1 cm chunks
  • 2 medium red onions, cut in chunks
  • Chicken for 4 people
  • 2 cloves garlic or 1 tbspn garlic paste
  • 1 Tbsp +/- lemongrass paste and ginger
  • 2 courgettes, cut in 1cm semi-circles
  • 1 tbspn brown or white sugar
  • 1 tbspn fish sauce
  • 1-2 green peppers in chunks
  • 1 tbspn white wine vinegar
  • 2 tbspn Thai green curry paste
  • 1 tin coconut milk

Method :
  1. Roast the aubergines with a bit of oil, garlic, s&p in oven at 180 deg until turning brown.
  2. In a large saucepan fry for 10 mins the onion, chicken, garlic, +/- ginger and lemongrass.
  3. Add the courgette, fish sauce, white wine vinegar and sugar. Fry for 5 mins.
  4. Add the aubergine, green peppers and Thai paste. Heat for approx 5 mins and then add coconut milk. Simmer for a few minutes.
