Ingredients :
- 2 kgs Mussels
- 1 teaspoon minced fresh garlic
- 1 teaspoon minced ginger
- zest of a lemon and a lime
- juice of 1 lemon and half a lime
- 1 teaspoon thai seasoning
- 1 teaspoon garlic and herb seasoning
- 3 bay leaves
- 1 teaspoon tomato paste
- 1 chicken stock cube
- 1 cup water
- 2 cups dry white wine
- to taste mushrooms
- 1 can coconut cream
- to taste pepper
- to taste salt
- to taste coriander
Method :
- Clean mussels then leave them soaking in clean water before cooking
- Put garlic ginger onion zest in a big pot that has butter and oil heated and leave for a few minutes stir be careful not to burn the garlic
- Add wine and tomato paste cook out a bit then add seasonings stock cube bay leaves lemon and lime juice water and coconut cream
