
Ingredients :
- 6 Bell peppers (hollowed out and boiled semi tender) keep the tops!
- 6 large grade A eggs
- 1 (6 oz) bag- fresh baby spinach (chopped) save 20 leafs unchopped!
- 3 potatoes shredded and lightly browned on stove top
- 1 medium onion diced (mix in with browned potatoes on stove top)
- 1 small bag of finely shredded cheddar cheese
- 2 chopped jalapeƱos, also mis into potato and onion mixture
Method :
- Preheat oven to 350
- In large bowl, mix together cheese, onion, potatoes, jalapeƱos, and chopped spinach. (Save the 20 or so whole spinach Leafs unchopped for later) season the mixture to your taste.....
- In a foil lined baking dish, arrange the six hollowed out boiled peppers.
- Fill the peppers 3/4 full with the mixture then lay 2-3 whole spinach leafs on top of the mixture in each pepper
- Crack open and add one whole egg to each pepper.
- Cover with a bit of cheese and the pepper top... Bake 20 to 25 minutes at 350 or until egg is fully cooked.
