Ingredients :
- 18 Spring roll wrappers
- 1 small carrots
- 4 large wood ear
- 1 portion Chinese vermicelli
- 2 tbsp Oyster sauce
- 3 tbsp water
- Salt
- Pepper
- Oil for frying
- Sweet and chill sauce
Method :
- Set the frozen Spring roll wrappers at room temperature for 30 min before using.
- Soften the Chinese vermicelli in water for 30 mins. Slightly cut them before use. Cut carrots and wood ears into thin slices and set aside.
- In a frying pan, heat oil at high heat. Add carrots and cook for 3 mins at medium heat.
- After that, add in Wood ears and cook for another 4 min. Then add in oyster sauce and mix well.
- Add in water, then vermicelli and cook for 2-3 mins until they turns transparent. Add in salt and pepper to taste.
- When the filling is ready, let them to cool completely at room temperature.
- On a plate, place one spring rolls wrapper and put in enough amount of filling. Carefully roll the wrapper and fold both side over the filling. Use water to stick the ending of the wrapper. Repeat the steps until all fillings are used.
- Heat oil in a saucepan. To check the temperature of oil, by putting a wooden chopstick into the oil, if there are small bubbles formed around it, the oil is ready.
- Add in spring rolls and deep fried until they are golden brown.
- Place them on kitchen towel to remove excess oil. Serve them with sweet and chill sauce to taste.
