Ingredients :
- 250 g green eggplant
- 1 medium size red onion
- 2 green chilies
- 1/2 teaspoon turmeric
- 1/4 teaspoon red chill powder
- 1 tablespoon coriander powder
- 1 teaspoon cumin seeds
- to taste salt
- 2 tablespoons cooking oil
Method :
- In heavy base frying pan add oil. Let the oil heat.
- Add cumin seeds. Once they start to splutter add finally chopped onion.
- Once the onion is golden brown add all the ingredients except eggplant. Stir it for two minutes and add finally sliced green eggplants.
- Now cook it without covering it on lower heat. Make sure that you do whole cooking on medium heat.
- Once the oil starts to separate that means the dish is ready. Stir it gently.
