Ingredients :
- 3/4 kg lamb chops
- 4 tbsp olive oil
- 1 onion
- 3 cloves garlic
- 6 tomatoes peeled and chopped
- salt
Method :
- Heat the oil in a frying pan, add the lamb chops and brown on both sides then place in a casserole dish and set aside.
- Chop and sauté the onion in the frying pan using the same oil then add the crushed garlic - fry for a few minutes.
- Add the tomatoes to the frying pan and season with salt - after 5 mins add the mixture to the lamb chops in the casserole dish.
- Cover the casserole dish and place in a preheated oven (180°C/350°F) for about 30 mins until the lamb chops are tender.
