
Ingredients :
- 1 pack (6 oz) Chicken of the Sea Salmon
- 1/4 cup finely chopped green onions
- 1/4 cup mayo
- 1 Tbsp. fresh squeezed lemon juice
- 1/2 tsp. garlic powder
- dash cayenne pepper
- 1/4 cup chopped red bell pepper
- 1 med. egg beaten
- 1 cup seasoned bread crumbs
- 3 Tbsp. butter
Method :
- Combine 1st seven ingredients in med. bowl, egg and 1/3 cup breadcrumbs. Form mixture into 4 balls.
- Roll salmon balls in remaining breadcrumbs; flatten into cakes about 1/2 inch thick.
- In skillet, melt butter over medium heat. Fry 3 - 4 minutes per side till golden brown.
