Ingredients :
- 1 box Penne rigate
- 2 cup Baby spinach
- 1 carrot, sliced
- 1 green pepper, cubed
- 1/2 Red pepper, cubed
- 1 small yellow onion, diced
- 6 Grape tomatoes, halved
- 1/4 cup grated parmesan cheese
- 1 tsp lemon zest
- 1 tbsp lemon juice
- 4 Thyme sprigs
- 3 oregano sprigs
- 3 rosemary sprigs
- black pepper
- 6 tbsp Italian vinaigrette
Method :
- Boil pasta to al dente. Rinse immedialtely with cold water and set aside.
- Combine pepper, oregano, thyme, rosemary, lemon juice and zest, and mix until combined.
- Add carrots, peppers, onions, tomatoes, and spinach.
- In saucepan, mix together veggie mix and pasta.
- Add vinaigrette and refrigerate until cold.
