Ingredients :
- 1 head kale, washed, stems stripped and ripped into small pieces
- Olive Oil
- Sea Salt
- 1/4 c Pine nuts
- 1/4 c diced tomatoes
- 1/4 c. diced cucumber
- 1/4 c. diced carrots
- 1/4 c diced celery
Method :
- Place clean kale in a large salad bowl and drizzle with a small amount of olive oil and a dash of sea salt. Massage kale with your hands for a few minutes until it softens. This helps the kale become easier to digest.
- Add tomatoes, cucumber, carrots, celery & pine nuts and toss with Dressing.
