Ingredients :
- 2 tbsp vegetable oil
- 1 lb frozen corn, thawed
- 1/2 tsp salt
- 3 sliced scallions, (white and green parts)
- 1/4 tsp crushed red pepper flakes
- 1/2 cup coconut milk
- 1/2 cup water
- 1 tbsp cider vinegar
- 1/2 cup fresh cilantro leaves
Method :
- Heat vegetable oil in a large skillet over medium heat.
- Add corn kernels, scallions, salt and red pepper flakes.
- Cook until softened, about 5 minutes.
- Add coconut milk and water and simmer until thickened, about 5 minutes.
- Remove from the heat and stir in cider vinegar and cilantro leaves.
