Ingredients :
- 2 tbsp unsalted butter
- 3/4 cup minced shallots
- 32 oz frozen peaches
- 2 tbsp fresh lemon juice
- 2 tbsp apple cider vinegar
- 1/3 cup light brown sugar
- 1 tbsp Worcestershire sauce
- 1/2 cup chicken stock
- 1/3 cup bourbon whiskey
- to taste kosher salt
- to taste ground black pepper
Method :
- In a saucepan melt butter over medium-high heat.
- Add shallots and sweat until soft.
- Add peaches, bring to a simmer and let cook for five minutes.
- Add lemon juice, cider vinegar, brown sugar, Worcestershire sauce, and chicken stock.
- Simmer until thick, approximately 15-20 minutes
- Add whiskey, return to simmer, cook for five minutes and remove from heat.
- You may adjust the seasoning and sweetness if you would like.
- Puree mixture with immersion blender or food processor till smooth and thick.
