- 6 medium zucchinis
- 1/4 teaspoon salt

- 1 pound bulk sausage
- 1 tablespoon fennel seeds
- 3 tablespoons vegetable oil

- 2 pounds ground sirloin
- 1 pound bulk sausage
- 8 ounces fresh mushrooms
- 1 large green bell pepper
- 1 large yellow bell pepper
- 1 large onion
- 1 cup black ripened olive
- 1 cup green olives stuffed with pimento
- 1/3 cup sugar
- 1 teaspoon whole oregano leaves
- 1 teaspoon basil
- 1 teaspoon granulated garlic powder
- 28 ounces fire roasted diced tomatoes
- 28 ounces tomato sauce
- 12 ounces tomato paste

- to taste grated parmesan cheese
- to taste red pepper flakes
Method :
- You may need a couple of special tools for this recipe, a vegetable stripper, mandolin, or grater. Salad spinner, muslin cloth, or cheese cloth. This to strip the zucchinis into strips and to drain the excessive liquids from zucchini.
- Strip the zucchini then salt it. This will draw the extra liquids out.
- Spin or put into cloth and gently press the liquids out.
- Chop the bell peppers, onions, and mushrooms. Slice all the olives in half. This will allow you to check for pits. Mix together.
- Start browning your meat.
- Add the peppers, onions, mushrooms, and olives. Mix well with the meat and let it meld together. Add herbs and spices. Add sugar.
- Mix the fennel seed with the second pound of sausage, form into little disc.
- Fry in a pan with 2 tablespoons of oil
- When the disc are done having a crust outside but done on the inside.
- When the ground sirloin, sausage, and mushroom and pepper mixture is done add tomatoes
- Mix well
- Add tomato sauce let simmer then add sausage fennel seed disc. Mix well and simmer.
- Add tomato paste after 10 minutes of simmering.
- Simmer taste and adjust seasonings. Simmer 3 minutes more to incorporate the new seasonings.
- By now the the zucchini should be ready and drained. Put together add your cheese and red pepper flakes. Serve hope you enjoy!
