
Ingredients :
- 2 tbsp oil
- 2 onions, chopped
- 1 red bell pepper, chopped
- 4 skinless chicken breasts, cubed into bitesize pieces
- 4 tbsp Vickys Balti Curry Paste
- 1 tsp cinnamon
- 1/2 tsp garam masala / ras-el-hanout
- 1/2 tsp fenugreek leaves
- 400 g can of chopped tomatoes
- 150 ml chicken stock
- boiled rice and naan bread to serve
Method :
- Heat the oil in a saucepan, add the pepper and fry off with the onion until translucent
- Add the chicken then stir in the balti paste and spices, cooking for 2 minutes to brown off the chicken
- Add the tomatoes and stock. Let simmer for 15 minutes. Adjust to taste - add chilli powder if you like or some mango chutney or sugar to sweeten. Balti shouldn"t be too spicy but you know best how you like it!
- Serve with boiled rice and naan bread
