
Ingredients :
- 1/2 head chopped romaine lettuce
- 1/2 head chopped raw cabbage
- 1/2 head chopped iceberg lettuce
- 1 can drained, rinsed black beans - 15oz
- 1 can drained whole corn - 16 oz
- 1 1/2 fresh diced tomatoes
- 1/2 bunch of cilantro, chopped
- 1/2 cup chopped onion
- 1 chopped bell pepper
- 1 1/2 cup Diced, cooked chicken
- 1/2 cup shredded cheese - optional
- 12 oz Opadipity Chipotle Ranch Greek Yogurt Dip
- 1 avocado (sliced or diced for garnish)
- 1 Bag of plain tortilla chips
- 1 envelope Low sodium taco seasoning
Method :
- Add all ingredients in a large bowl (except, yogurt dip, chips and taco seasoning)
- Put tortilla chips in a large sealable bag, pour in taco seasoning and shake until coated. (It coats a lot very well)
- Add yogurt dip to the ingredients in the bowl and fold into the mixture until well combined.
- Crush chips and add to the salad (per plate) and serve!!! (or use them to scoop up and eat the salad like my son did! :-D)
